Ordinary Week

Nothing exciting has really happened this week although it was a busy one: soccer (Darrin and Josh), preschool, baby shower, cub scouts, church ball, visiting teaching, EQ meetings, back to school night, etc.

Tuesday is Andrew’s b-day, so we will have lots to post next week. 

::To kick off the weekend here is our new favorite breakfast food::

Chocolate Pecan Waffles

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 eggs
  • 1 cup sugar
  • 1 cup whole milk
  • 1/2 cup butter, melted
  • 2 ounces unsweetened chocolate, melted and cooled
  • 1/4 teaspoon vanilla extract
  • 1/4 cup chopped pecans
  • Fresh raspberries and whipped topping
Directions:

In a large bowl, beat eggs and sugar until foamy; beat in the milk, butter and vanilla. Stir in the chocolate.
    In a large bowl, combine the flour, baking powder, salt and baking soda. Stir in chocolate mixture just until combined; fold in pecans. Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve with raspberries and whipped topping. Yield: 16 waffles.

And actually I’ve never made them with pecans.  I’ve used walnuts, because I have those on hand.  I’ve also left the nuts out all together, and they are still to die for.

So go to the store today, buy the stuff, and make them tomorrow morning.

P.S. I do use skim milk. Never tried chocolate chips....

yummy...what a nice mom you are! I'm lazy and we usually use a chocolate cake mix and then substitute the maple syrup with hersheys amd top with whipped cream. We call them awful waffles!
